Compact Commercial Kitchen Layout of the Small Food Trailer

Given the food trailer size, it really took us a lot of effort when designing the mobile layout in the trailer to maximize the space in order to install the kitchen equipment that the client requires and provide more storage room. Here is how we design the small food trailer layout that meets the client's workflow and improves working efficiency.

 

• The Stainless Steel Worktable: The small food trailer has 2 worktables made of food-grade stainless steel. Fixed near the concession window, the front table gives a large serving area and a countertop for placing portable cooking appliances. The rear table is mainly used for cooking. It has the cooking appliances that the client demands and open cabinets for storage.
• The Water Sink: A 3 compartment water sink is an indispensable feature for the food trailer in the US. Considering its size, we did a little change to the plumping design and fixed the sink next to the side window. Besides, we installed a large stainless steel clean water tank and a waste water tank under the sink to couple with the large demand for water.
• Commercial Fridge: The small food trailer has a commercial fridge (170L net capacity) that is installed under the front table. The fridge has a large compartment for refrigerating and freezing.
• The Cooking Equipment: The deep fryer and the gas grill generate greasy fumes in cooking, so we placed them on the rear table and installed a stainless steel range hood above it. They are not permanently fixed on the table. With a countertop design, the fryer and the grill can be removed or replaced with other appliances easily. The waffle machine and the hot dot grill are on the front tables and near the electrical outlets.
• The Pull-out Trash Can: A pull-out trash can is hidden in the cabinet of the rear table, and it can glide out of the cabinet smoothly when you tug the handle.
